Superpopular with locals, this unpretentious canteen in the basement of Wannian Commercial Building has been serving up handmade, thick, floury, Shandong-style noodles since it opened in 1949 (a momentous year for Taiwan!). You can watch the noodle makers in their puffs of flour while you eat. The noodles are firm and bouncy, and the beef broth is light and tangy.

Since it was given a mention by Michelin, this humble noodle joint has upgraded its sign to include English, so it will be easy to find.
